Ripening and pre-cooling rooms that move air through the fruit, not around it.
Fruit ripens evenly only when every carton sees the same air. Differential pressure rooms use a tarp and a pressure difference to pull air through the vented boxes. The cooler has to move enough air against that pressure and hold temperature to a fraction of a degree.
Ripening rooms use differential pressure unit coolers that pull air through vented cartons stacked in two rows under a tarp. Forced-air pre-coolers use the same airflow path to pull field heat out of produce right after harvest.
What makes it hard.
The problems we size against.
Uneven air means uneven fruit.
If air goes around the pallets instead of through them, some cartons ripen early and some late.
Field heat costs shelf life.
Every hour produce stays warm after harvest takes days off its life on the shelf.
Temperature control is tight.
Ripening schedules depend on holding pulp temperature closely through each stage.
How the system works.
From the load to the air, in four steps.
- Fruit sits in two rows.
Pallets of vented cartons line up on each side of a center channel, covered by a tarp.
- The cooler draws a pressure difference.
Fans pull air from the channel, so room air is forced through the boxes.
- Air passes every carton.
Conditioned air flows through the fruit and back to the coil.
- The coil holds the setpoint.
The unit cooler holds the air at the stage temperature.

Questions about produce ripening
How does a differential pressure ripening room work?
Pallets stand in two rows with a tarp over the gap between them. The cooler pulls air out of the gap, which creates a pressure difference that forces room air through the vented cartons. Every box sees the same air.
What is forced-air pre-cooling?
Forced-air pre-cooling pulls cold air through produce right after harvest to remove field heat quickly, which extends shelf life.
